Boneless leg of lamb from Australia, about 3 kg per piece.

With the bone out, it’s a straightforward roast — and it carves without anything to work around. It also breaks down easily if you’d rather butterfly it for the grill or cut it into cubes.

Comes frozen.

No two legs weigh the same, so you’ll see a weight variance fee at checkout. Once we weigh the piece that’s going to you, you’re refunded the difference — you only pay for the lamb you actually get.

Serving Ideas:

Sunday Roast: Garlic, rosemary, lemon, olive oil. Roast, rest, carve.
Butterflied on the Grill: Open it flat, marinate, and grill over medium-high for charred edges and a pink middle.
Kebabs & Souvlaki: Cut into cubes, skewer, and cook fast.
Slow-Roasted for Pulling: Low oven for several hours until it shreds, then into pitas with tzatziki.
Curry or Stew: Cubed and simmered — the cut takes big spice well.
Leftovers: Sliced thin for sandwiches the next day.

Cooking Instructions

Thaw First

Thaw in the fridge, not on the counter. A 3 kg leg needs a full day, and closer to two if your fridge runs cold. Don’t try to cook this one from frozen.

Roast (whole)

Take it out of the fridge 45 minutes before it goes in. Season well — salt, pepper, garlic, rosemary.

Start at 450°F (230°C) for 20 minutes to colour the outside, then drop to 325°F (165°C) for the rest. At about 3 kg, figure roughly 1¾ to 2¼ hours total, but go by temperature, not the clock:

130–135°F (54–57°C) — medium-rare
140–145°F (60–63°C) — medium

Rest 15–20 minutes before carving. It climbs another 5°F or so while it rests.

Butterflied on the Grill

Open it flat so it’s roughly even in thickness. Marinate if you like, then grill over medium-high, 10–15 minutes a side depending on thickness, to the same temperatures above. Rest 10 minutes and slice across the grain.

Slow-Roasted for Pulling

Season, cover, and roast at 300°F (150°C) for 4 to 5 hours, until it pulls apart with a fork.

Kebabs

Cut into 1½-inch cubes. High heat, 2–3 minutes a side, until charred outside and still pink in the middle.

Storage Instructions

Keep frozen until the day before you need it. Once thawed, keep refrigerated and cook within a couple of days. Don’t refreeze.
