My roommate likes these cookies the very best. In fact he of limited cooking skills is sure to supervise the cooking process and to actually lift the sheet pans out of the oven. After a brief period of cooling he then transfers the cookies to the cooling racks. That process ensures that he tastes tests a few warm cookies with his coffee. These gems disappear quickly. I cook about 30 to 36 cookies each week and I definitely use parchment paper on the cookie sheets. No waste of the used paper as it does a second duty as oiled paper to light the wood fireplace. I like the double chocolate cookies and the shortbread cookies. Just personal preference. Note monitor the cooking times carefully and rely upon one's sense of smell for doneness as these all brown up very quickly.
