Pangrattato (Italian Crunchy Garlic Breadcrumb “Finisher”)
Makes: ~1 cup (enough for 6–8 servings)

Ingredients
- 1 cup panko or fresh breadcrumbs (panko = extra crunch)
- 2–3 tbsp olive oil (or 2 tbsp butter + 1 tbsp oil for extra richness)
- 2 cloves garlic, finely minced (or ½ tsp garlic powder in a pinch)
- 2 tbsp parsley, finely chopped (optional but very “restaurant”)
- 1 tsp lemon zest (highly recommended)
- ¼ tsp salt
- Black pepper to taste
- Optional upgrades:
- 2 tbsp grated Parmesan
- ¼–½ tsp chilli flakes
- ½ tsp smoked paprika
- 1 tsp porcini powder (if you want “signature dust” energy)
Instructions
- Heat oil in a skillet over medium heat.
- Add breadcrumbs and toast, stirring often, until golden and crunchy (about 3–5 minutes).
- Add garlic and toast 30–60 seconds (just until fragrant — don’t let it burn).
- Remove from heat. Stir in salt, pepper, lemon zest, parsley (and Parmesan if using).
- Let cool. It gets even crunchier as it sits.
