This selected pork leg has approximately 1/3 of the skin removed from the front of the leg and fat is cut on a bevel. It is then cured using special cures to give it a distinct flavour. It is cooked and naturally smoked using real hardwood chips, not chemical dips or sprays. This product is not fully cooked and must be cooked to a minimum internal temperature of 160°F (71°C) before serving. A great holiday tradition but can be enjoyed as a main dish for any meal, any time.
